Basically, id like to have ventrilo running through my headset, and everything else coming out of my speakers.

Your sound card must support "multiple streaming" for that to work. If you enable it in your sound card, you will see two output devices instead of one. Just setup your app to use which output to use. That way, the jack at the back of the PC will have different output than the front jack.
